  • This weeks Cooking with the FREE & Cheap Recipes is this great Apple Salsa Recipe and Cinnamon Sugar Chips.

    Here on ‘I am THAT lady’ I want to show you that you can cook inexpensive and healthy meals for under $10.  The prices were taken from my local grocery store but you should find comparable prices at your local store, you can print this recipe by hitting the print icon on the bottom of this post.

    Here is a great after school snack for the kids or a dish to bring to a fall party.  It is easy, quick, and DELICIOUS!!! My kids could not stop eating it.  If you wanted to add more to it, I think you could mimic sour cream by using greek yogurt and it would taste incredible. Hope you enjoy!

    Apple Pie “Salsa” and Cinnamon Sugar Chips

    Ingredients:

    • 2 cups apples, peeled and diced
    • 5 whole wheat tortillas cut into wedges
    • 2 tbsp lemon juice
    • ¼ tsp cinnamon
    • 3 tbsp brown sugar
    • 1 tsp water
    • 1 tsp cornstarch
    • 2 tbsp melted butter
    • ½ tsp cinnamon
    • 1 ½ tbsp sugar

    Directions:

    1. In a small saucepan heat the apples, lemon juice, ¼ tsp cinnamon, and brown sugar until boiling and apples start to release some liquid.
    2. In a small dish mix together the water and cornstarch and add to apples.  Continue to heat until sauce has thickened.
    3. Heat your oven to 410 degrees.
    4. Spread out your tortilla wedges on a greased baking sheet.
    5. In a small dish combine the sugar and remaining cinnamon.
    6. Brush each wedge with butter and then sprinkle with cinnamon sugar.
    7. Bake for 5-8 minutes or until chips are golden brown.

    * You can serve your “salsa” warm or cold.  I thought it was amazing warm with the chips.
