Get ready to RULE Memorial Day weekend. This Raspberry-glazed Bacon Brie Burger will get glowing reviews from your family and guests… just make sure that you leave yourself one to eat. This isn’t your typical bacon cheeseburger. Throw out that floppy, nuclear-orange, plastic-wrapped American “cheese”. Let’s cook a REAL bacon cheeseburger!
We all know how well brie cheese pairs so well with the sweetness of a fruit like raspberries. Add to that a rich, juicy beef burger, and some salty crispy bacon and you will be one cold beer short of being in heaven.
To start with, I must let you know that I have a pretty strong opinion when it comes to burger patties. And my opinion is this – don’t mess with the meat. I see so many burger recipes that call for spices, egg, vegetables, or breadcrumbs mixed in the meat patty. Look – if you’re using beef, especially a tasty beef like the SimplyNature 100% Grass Fed Ground Beef I found at ALDI, salt is the only seasoning you will need.
If you want added flavors, make them toppings and sauces… and we will definitely do that with this burger.
The more you mix and mess with the meat, the more compacted it will become, and that results in a dryer burger with a more rubbery texture. Grab a chunk of ground beef, measure it by weight anywhere between 1/4 to 1/2 of a pound, and then carefully form it into a large disc. Make it a bit larger diameter-wise than you want it to be when it’s done, since it will shrink.
Before you cook the burgers, fry your bacon and set it aside… now for the part of the burger that sets it off – the raspberry caramelized onions.
Thinly slice a sweet yellow onion and set aside. In a medium pan over medium heat, melt the butter. Add the onions, salt and pepper, and reduce the heat to low. Cook them for a few minutes to get them golden brown. Make sure to watch the heat – you do not want them to burn. Then reduce the heat to low and add the raspberry preserves and cook for another 10 minutes.
Set aside once done.
Now it’s burger cooking time. Get your grill nice and hot, liberally salt both sides of the burger patties and then throw them on the grill. When they are halfway done cooking, flip them and cook for another few minutes. Add the cheese and bacon on top and cook until the cheese is gooey and melty.
Once they’re done (165 degrees in the middle to be safe… but medium never bothers me), place them directly on the bottom bun. Top with the raspberry caramelized onions and then watch your guests devour them.
