Loaded Baked Potato Casserole Recipe

    Here on ‘I am THAT lady’ I want to show you that you can cook inexpensive meals for under $10.  The prices were taken from my local grocery store but you should find comparable prices at your local store, you can print this recipe by hitting the print icon on the bottom of this post.


    Loaded Baked Potato Casserole


    • l lbs boneless chicken cut into small cubes
    • 6-8 medium size potatoes, peeled and cubed
    • 1 tsp salt
    • 1/8 cup olive oil
    • 1 tsp pepper
    • 1 tsp paprika
    • 1 tbs garlic powder
    • 4 Tbsp hot sauce – cost about $.25
    • 6 oz shredded cheddar cheese
    • 6 oz. bacon, cooked and chopped
    • 3/4 cup chopped green onion


    1. Preheat your oven to 450 degrees and grease a 13×9 baking dish.  
    2. In a large bowl combine cubed potatoes, olive oil, salt, pepper, paprika, garlic, and hot sauce.
    3. Stir well to coat.
    4. Use a slotted spoon, so that you leave the “marinade” in the bowl for the chicken, to place the potatoes into the 13×9 dish.
    5. Place the chicken into the marinade and let sit.
    6. Cook potatoes for 45-50 minutes, turning every 10 minutes.
    7.  About halfway through the potatoes cooking, toss the chicken into a skillet and cook until done.
    8.  In a small bowl combine the bacon, cheese, and green onion.
    9. Once the potatoes are done, layer the chicken on top and then top with cheese mixture.
    10. Place back in the oven for 5-10 minutes or until cheese is melted.
