There are days when I need chocolate and I NEED CHOCOLATE NOW!! Does anyone else have those days? Please tell me I’m not alone! I always have ingredients to make these easy no bake cookies, that way when I am in a pinch I can make them in 5 minutes or less! Because who really has time to wait for cookies to bake in the oven?
I know many of you have set the goal to lose weight this year (so have I) so I tried to figure out a way to make these with less fat.
I found that Smart Balance blended butter has less saturated fat than traditional butter. Smart Balance Blended Butter Sticks contain 5g of saturated fat, compared to regular butter which contains 7g of saturated fat. You can also use the Smart Balance Spreadable Butter and Canola Oil blend. It has half the cholesterol and close to 50% less saturated fat than traditional butter.
Although these cookies are not healthy, they have less saturated fat because I used Smart Balance blended butter sticks. The Smart Balance peanut butter I used also has 0 Trans Fats, is gluten-free and vegan. I used Bob’s Red Mill Gluten-Free Oats for this to keep the recipe gluten-free since I am on a gf diet. This recipe calls for 3 and 1/2 cup of quick cooking oats, but I decided to substitute 1/2 cup of the oats for whole dry peanuts; this added some extra protein to the recipe and a nice crunch.
