    Our family loves a hearty meal.  We’ve all got great appetites and love bold flavors.  That’s why we’ve come to love this recipe for Italian Sausage Stuffed Chicken Breast.

    The chicken is seasoned simply and cooked just until tender and delicious.  This is contrasted with the bold and hearty meatiness of the sausage mixture.  I love the way that the peppers and onions give the sausage filling a mild sweetness.

    The prep for this meal is super easy.  The first step is to butterfly the chicken and pound it to flatten it a little.  Then just chop the vegetables and you’re ready to start cooking.

    You can serve this dish over pasta or rice.  Try pairing it with a nice loaf of Italian or French bread.

    Italian Sausage Stuffed Chicken Breast

    With a little effort, you can enjoy a juicy, delicious chicken breast stuffed with Italian sausage and smothered in sauce.

    Ingredients

    • 2 large chicken breasts
    • 1 teaspoon dried oregano
    • 1/2 teaspoon thyme
    • 1/2 teaspoon basil
    • 1 pound Italian sausage
    • 1/2 cup onion chopped
    • 1/2 cup bell peppers chopped
    • 1/2 cup pasta sauce
    • 2 tablespoons olive oil
    • 1/2 cup water

    Instructions

    • Split the chicken breast in half creating a butterfly when opened. Gently pound the chicken until it is half the thickness you started with.
    • Place the chicken breast in a bowl and add oregano, basil, and thyme. Refrigerate.
    • In a saute pan, crumble and brown the Italian sausage until fully cooked.
    • Add onions and peppers to the sausage and cook over medium heat for 3 - 4 minutes until the onions become tender.
    • Remove half of the sausage mixture to a small dish. Set aside.
    • Stir pasta sauce into the saute pan of sausage and bring to a low simmer. Reduce heat to low and place a lid on top.
    • Heat a new saute pan over medium heat. Add 2 tablespoons olive oil.
    • While the pan heats, prepare the chicken by placing half of the dished sausage mixture into the opening of each chicken breast. Fold the chicken over the sausage and place it in the heated oil.
    • Cook for 5 minutes. Turn the chicken carefully to brown the other side for 5 more minutes. Add water to the pan and cover. Cook the chicken until internal temperature reaches 165 degrees.
    • Remove from heat. Allow to rest 2 minutes before serving. Cover with sausage pasta sauce to serve.
