Italian Soup with Sausage and Kale

    This amazing Italian Soup with Sausage and Kale completely hits the mark when the weather starts to get colder. Wait… or is it a chowder? What’s the difference anyway? I’ll leave that for the foodies to argue about… all I know is that you have to try this recipe! It’s easy, cheap, and tastes very similar to a soup you might have had at Olive Garden.

    Other versions of this dish use creams and fatty pork sausage (which are great in their own right). In an attempt to make it a bit cheaper and healthier, I used turkey sausage and whole milk. There was no lack of flavor or richness to this chowder. My kids ate it up with no problem, greens and all!

    Best of all, you can make this using all Aldi ingredients (and you might see this in an upcoming meal plan *wink*). If you have the stock on hand, it should only cost about $7 to make this soup. For the kale – I used half of the 5 oz. package of baby kale.

    Sausage and Kale Chowder

    Ingredients

    • 1 lb. of ground turkey sausage
    • 3 - 4 large russet potatoes halved lengthwise and sliced thin
    • A bunch of regular kale or baby kale rinsed
    • 1 onion chopped
    • 3 cups chicken stock or broth
    • 5 cups of whole milk
    • 1 Tbsp oregano
    • 1/2 tsp Red pepper flakes
    • 1 - 2 tsp salt if using chicken broth, use only 1 tsp
    • 1 tsp black pepper

    Instructions

    • Boil sliced potatoes for about 10 minutes. Drain, rinse and set aside.
    • Brown sausage with onion.
    • When sausage is cooked, add stock (or broth), milk, oregano, red pepper flakes, salt and pepper. Slowly bring to a boil. Note: if using turkey sausage, there is no need to drain the meat. But if using pork sausage, drain the meat before adding liquid ingredients.
    • Slowly bring to a boil.
    • Add potatoes and kale.
    • Simmer for 10-15 minutes.
