Meatball subs are amazing. But have you ever had that problem where the meatballs fall out of the sub and into your lap? Or the ground? It’s horrible… those delicious tender meatballs… WASTED. And I also never really thought of a meatball sub as a summer food.

    Until now.

Meatball sub burger. Problem solved. And honestly, I don’t know why it took me so long to do this. I love burgers, I love meatball subs. It’s a match made in heaven.

And here’s the thing, I’m not the kind of person who normally puts breadcrumbs, egg, or really anything in my burgers. I just do salt and that’s it. In fact, I usually poo-poo crazy burger recipes with tons of ingredients built into the meat patties. But this is something completely different.

    meatball sub

I basically just took my standard meatball recipe and instead of balls, I made them in to burger patties. Oh – with one more change. Instead of breadcrumbs, I decided to use crushed crackers. But not just any crackers – I used ALDI exclusive Savoritz Rosemary & Olive Oil Woven Wheats Baked Crackers – and they worked AWESOME. Not only do they act as a standard breadcrumb, but since the seasoning is so on-point with these crackers, it actually enhanced the flavor profile of the meat. And I also ate a few while I was preparing the dish 🙂

After the patties are made, just grill as you normally would. After you flip the burgers, add a generous slice of fresh mozzarella and let it melt. Once the burger is done all the way through, place on the bun, and top with your favorite tomato sauce. I had some leftover spaghetti sauce from a couple nights ago that worked well. But you could just use some jarred sauce, too, if you want.

No other toppings needed. Just eat it! Summer comfort food at its finest!

And I’ve got some other great news! Those crackers that are used in this recipe – the ALDI exclusive Savoritz Rosemary & Olive Oil Woven Wheats Baked Crackers – they were named the 2016 Better Homes and Gardens Best New Product in the savory snack category! Once you try them, you won’t be surprised by that…
