  • In 2006 I moved from NY to the Carolinas. The one thing that stuck out to me when we first moved there was their barbecue. It was different from New York and I immediately had to know how to make it. My favorite recipe was this North Carolina Pulled Pork.

    I finally decided to share it with you all! You all know that I love my Crock Pot Recipes, and this one is sure to please! I used this 6 qt. Crock Pot to cook this recipe, and it turns out perfect every time!

    Every area of the country has their own flavor and pizazz.  North Carolina is known for its sweet and tangy vinegar-based barbecue (among other things) and this recipe will bring the flavor of the south to your home. It is very different from my traditional crockpot pulled pork recipe.

    Your family won’t believe that this North Carolina Pulled Pork is made with only 6 simple ingredients. You’ll combine deliciously sweet onions and rich brown sugar with apple cider vinegar, garlic, and red pepper flakes. That’s it! You don’t even have to add salt. I promise the simplicity of this recipe is the key. Simmer all day and then serve with homemade coleslaw.

    The pork loin and coleslaw are made for each other!

    There’s only one way to balance the spicy, vinegar sauce. You have to top it with a sweet and creamy homemade coleslaw.  You could just top the shredded pork with grilled onions and call it a day, but trust me when I say that the mellow sweetness of the coleslaw will make your meal perfect in every way. Some of my family doesn’t even put the pair on bread – just pile them on and eat it with a fork!

    This peppery pork recipe has a cider vinegar base that will make your mouth water as it simmers in the slow cooker.

    Ingredients

    • 2 pound pork loin roast
    • 1/2 onion chopped
    • 2 cloves garlic minced
    • 1/2 cup brown sugar
    • 1 teaspoon red pepper flakes
    • 1/2 cup apple cider vinegar

    Instructions

    • Place all ingredients in the slow cooker and cover with the lid.
    • Cook on high for 4 - 6 hours or low for 6 - 8 hours.
    • Serve on rolls topped with slaw.

    Ingredients

    • 1/2 cup mayo
    • 2 tablespoons sugar
    • 1 tablespoon spicy brown mustard
    • 1 teaspoon vinegar
    • Salt and pepper to taste
    • 6 cups shredded cabbage and carrots

    Instructions

    • In a small bowl, combine the mayo, sugar, mustard, and vinegar. Stir to combine and add salt and pepper to taste.
    • Stir the sauce mixture into the shredded vegetables. Make sure to coat the shredded vegetables evenly.
    • Refrigerate or use immediately. Refrigerate any leftovers.
