Comfort food at it’s best! This slow cooker recipe combines classic American meat and potatoes with bell peppers and onions for a satisfying and flavorful easy meal. And don’t let the garlic and Worcestershire sauce fool you, kids love this dish! The bell peppers mellow out the flavors with their sweetness.
We used London broil for this recipe, but you could also choose to use stew meat or even smaller pieces of strip steak if that’s what you have on hand. Beef can be pretty expensive, so just make sure to marinate cheaper cuts of meat so that they turn out juicy and flavorful.
If you’d like to prepare the recipe ahead of time, just place all the ingredients into a gallon freezer bag. Lay it flat to freeze and you’ll be able to store it for a few months. When you’re ready for an easy dinner, just pull the freezer bag out the night before (or don’t). Even if you forget this meal will cook up perfectly in the same amount of time.
This is a super dish to prepare when you have extra guests coming over because you can just throw in a few more potatoes to make the recipe serve more people.
When you place the ingredients in the slow cooker try to arrange the potatoes on top. This will keep the meat marinating in the delicious juices. It also keeps the potatoes from becoming mushy and overcooked. If you’re dumping in the ingredients after freezing them, then you can gently move the potatoes to the top.
If you forget to do this, it’s not a big deal. In fact, it makes the juices more like a gravy. The potatoes will be a little more crumbly and thicken the juices for a nice, savory sauce that you can spoon over the dish when serving..
