Here is one of our favorite week night recipe for using up a roasting chicken. This is a super easy way to make dinner in just 5 minutes and have it ready for you when you either get home from work, or when it’s time for dinner.
This meals should cost you around $6.00 or less – so a very inexpensive meal too!

This looks yummy. Do you use the liquid left over as a stock? Do you need to do anything with it?
Do we cook on high or low for 6 hours?
After cooking, I removed the chicken and added 6 ounces of egg noodles to the liquid and veggies in the crock. You may need to adjust the amount of noodles or add water (or both to have more noodles) so that the noodles have enough liquid to cook properly. I replaced the lid and cooked on high for 30 minutes. Meanwhile I removed the chicken from the bones. When the noodles were done, I put them in bowls and put pieces of chicken on top. Excellent!
What you end up with is very good chicken noodle soup, and plenty of leftover chicken for sandwiches, chicken salad, etc.
