    Here is one of our favorite week night recipe for using up a roasting chicken.  This is a super easy way to make dinner in just 5 minutes and have it ready for you when you either get home from work, or when it’s time for dinner.

    This meals should cost you around $6.00 or less – so a very inexpensive meal too!

    Easy Slow-Cooker Chicken

    Ingredients

    • 1 whole chicken
    • 2 medium carrots
    • 2 medium celery stalks
    • 1 medium sized onion
    • 1 Tbsp Kosher salt
    • 1 tsp Pepper
    • 1 tsp Sage
    • 1 Tbsp Thyme
    • Water

    Instructions

    • Rinse the chicken and remove giblets.
    • Mix salt, pepper, sage and thyme and rub all over the chicken.
    • Chop all the vegetables
    • Place the chicken in the slow-cooker with vegetables, and pour in enough water to fill the bottom of the slow-cooker to about an inch.
    • Cook for 6 hours.

  • After cooking, I removed the chicken and added 6 ounces of egg noodles to the liquid and veggies in the crock. You may need to adjust the amount of noodles or add water (or both to have more noodles) so that the noodles have enough liquid to cook properly. I replaced the lid and cooked on high for 30 minutes. Meanwhile I removed the chicken from the bones. When the noodles were done, I put them in bowls and put pieces of chicken on top. Excellent!

    What you end up with is very good chicken noodle soup, and plenty of leftover chicken for sandwiches, chicken salad, etc.
