Sometimes winter overstays its welcome and you just want a taste of summer! This slow cooker recipe is perfect for those days when you want an easy, tropical meal to ward off the coldness outside.
I used fresh fruits in my recipe, but you can easily substitute with frozen mango chunks and bottled juices. The taste difference won’t even be noticeable. I’m not sure if there is any way this recipe could be easier!
I cooked the chicken thighs without chopping them up first. I feel like this keeps them from overcooking in the slow cooker. You can chop up the chicken thighs if you’ll be watching closely to keep them from cooking too long. This will cut down your cooking time.
You might be wondering if your kids will enjoy this meal. My kids loved it! They thought it was so fun to be eating fruit in their dinner and the mangos are always a special treat. Mangos have a fruity, sweet texture, and they keep their shape and flavor beautifully even when cooked.
You can always add a little more herbs and spices if that’s what your family enjoys. Try adding garlic, cumin, or red pepper flakes for an extra kick of heat.
You can easily prep this meal ahead of time. Place all the ingredients into a gallon freezer bag and lay it flat to freeze. Store it in your freezer until you’re ready to enjoy it. The day before you’d like to have this, simply pull the bag out and thaw it in your refrigerator. Even if you forget this thawing step, don’t worry. The meal will cook up perfectly with about 1 extra hour in the slow cooker.
While you’re prepping, why not make the rice ahead of time. I bake my rice in the oven and make two batches at a time. That way I can serve one meal’s worth immediately and then freeze the rest in a gallon freezer bag. Frozen, pre-cooked rice heats up quickly in the microwave and makes meal prep so much faster.
