This dish is one of my all-time favorite easy weeknight dinners. You can throw this crockpot scalloped potatoes and ham recipe together in 10 minutes and enjoy the aroma all day while it’s cooking. The ingredients are usually already in my kitchen and pantry so I can whip together Scalloped Potatoes and Ham any night of the week.
The ingredients might be a little different than your mom makes. The key to the flavor is in the rosemary, thyme, and mustard. Thyme and rosemary work well together to create a comfort food flavor. The mustard kicks it up a notch and works with the ham for a slightly salty touch.
I like to used pre-sliced ham so it’s easier to get those nice thin, bite-sized portions. This saves time and just makes the dish layer more easily. I try to cut the potatoes to the same thickness as the ham. This little tip will help you make sure that your potatoes are more crispy and not soggy.
You might be surprised that the potatoes and ham actually get a nice crust even in the slow cooker. That’s due to the butter working with the sugar in the ham to caramelize to a nice crispy crust. And it’s a beautiful golden brown!

Slow Cooker Scalloped Potatoes with Ham
Ingredients
- 4 large potatoes peeled and cut into 1/4 inch slices
- 1-1/2 pounds ham sliced
- 1/2 cup butter melted
- 1 teaspoon onion powder
- 1 teaspoon ground black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon spicy brown mustard
- 1 cup shredded cheese
- Optional: 1 cup sour cream or plain yogurt
Instructions
- Prepare the crock of a 5 - 6 quart slow cooker by generously spraying the sides.
- Layer the potatoes and ham into the pot.
- In a small measuring cup, stir together the butter, onion powder, pepper, thyme, rosemary, and mustard. Stir until no lumps remain.
- Pour the butter mixture over the potato and ham mixture.
- Cover and cook on high for 4 hours or low for 6 hours.
- Remove the lid and sprinkle the cheese over the top.
- Optional step: You may stir in the sour cream or yogurt for an extra creamy dish.
