    If there is one thing I love in the summer it is cookies… especially these Strawberry Cookies. I can make a quick batch in the morning, and have a delicious treat ready for the kids for after lunch or for after dinner.

    My secret ingredient for this strawberry cookies recipe is a strawberry cake mix. Yes, you read that right. This recipe is so easy to make because of the strawberry cake mix.  In fact, you only need 4 ingredients to make these delicious cookies.

    Now my family loves to make cookies, but there are two things that we just HAVE to have to make the perfect cookies.

    First, we use baking mats. Amazon has them on sale right now. These keep your cookies from burning on the bottom and they help them cook evenly.

    Second, The cookie scoops are also great to have. They make baking cookies so much easier. Plus the cookies are more evenly shaped, meaning they will all cook more evenly. Amazon has them on sale too.

    Now obviously, the more powdered sugar you use, the better… or atleast that is what my family believes.

    My favorite part about this cookie is how frugal it is. Cake mixes go on sale for just $1.00 all the time. However, if you use coupons, then you can get them for $0.50 or less.  You can even make these with a gluten free cake mix!

    Easy and Delicious Strawberry Cookies Recipe

    Ingredients

    • 1 Strawberry cake mix
    • 2 eggs
    • 1/3 cup of vegetable oil
    • Powdered sugar for coating the cookies

    Instructions

    • Preheat the oven to 350 degrees.
    • In a mixing bowl, mix the cake mix , eggs and oil (batter will be thick).
    • Spoon the cookies (teaspoon size) into a bowl of powered sugar and roll.
    • Place on cookie sheet.
    • Bake for 8 - 10 minutes until they start to brown around the edges (just slightly).
    • Allow to cool on the cookie sheet for a few minutes before moving them.
